
Cheese Sticks Deluxe

Preparation

Tempura Batter
Separate the egg whites from the yolks. Place the egg whites in a bowl and whisk lightly. Add your choice of spices, such as paprika, garlic, or allspice, and season with a pinch of salt. Stir in a little flour and mix until smooth. Set aside.
Prepare two additional bowls for breading: one with flour and one with panko.

Tomato Salsa
Sauté the diced shallots in butter in a frying pan. Dice the tomatoes and add them, then finely dice the pepperoncini and sauté with the shallots.
Deglaze with a little sherry or white wine and simmer until the desired consistency is reached.
Season to taste with salt, pepper, and allspice.

Cheese sticks
Cut the cheese into sticks about 10 cm long and place them on a plate.
Coat the sticks in the following order: dredge in flour, then dip in tempura batter, and finally, roll in panko until well coated. The sticks must be completely coated in batter and panko to prevent them from leaking during frying.
Fry the sticks in a deep fryer at 190°C until golden brown.
Caution: Do not over-fry – just fry briefly and let them stand.

Final touches
Place the breaded sticks on a plate lined with a napkin to absorb the oil. Sprinkle the sticks with a pinch of salt. To finish, spoon the tomato salsa into a bowl and serve alongside the sticks.
Instead of a deep fryer, you can use a frying pan with plenty of oil.
