Flammkuchen gratin

onion, cut into slices
salt, pepper, powdered paprika, nutmeg, curry powder, Piment d’Espelette, a little cinnamon, mix together to form the spice blend

Method

 

Lay out the Flammkuchen dough on a tray lined with baking parchment.

Cover the dough with creme fraiche and season to taste with the spice blend.

Scatter over the onions and bacon. Sprinkle over the finely grated cheeses.

Place on the middle shelf of the oven and bake at 220°C for seven to ten minutes.
